ingredients
- 1 tablespoon olive oil
- 1 tablespoon fresh ginger, minced
- 1 tablespoon fresh garlic, minced
- 1⁄2 - 1 teaspoon red chili pepper flakes
- 1⁄4 cup red pepper, diced about 1/2 pepper
- 1⁄2 cup broccoli floret, blanched
- 1⁄4 cup green onion, diced
- 1⁄4 cup carrot, shredded, small dice
- 1⁄4 cup red onion, diced
- 1⁄2 lb cooked shrimp
- 3 cups white rice, cooked, chilled
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
directions
- This goes very quickly so be sure you have everything cut up and ready to go before starting.
- Heat saute pan or wok over med. high heat. When hot add the oil, garlic and ginger and saute for 30 sec.
- Quickly add all the vegetables and saute for 1.5 minute stirring often.
- Add shrimp and cook to heat shrimp about 1 minute.
- Add the cooked rice and stir.
- Add the soy sauce and sesame oil and cook until rice is hot.
- Serve immediately.

Thought I'd miss my fried egg and cornstarch based sauce, but I didn't. This was good. I'd just encourage you to take care in cooking - this burns quite easily, at least mine did; nothing that couldn't be easily fixed though. Particularly appreciate this recipe because I generally have all the ingredients on hand. It also lends itself to additions of whatever else is fresh, say asparagus.
