Fried Turkey Rub With Cajun Injection

"This recipe came from a Southern gal who obviously knows her food. She wrote on the recipe "the basis for a good fried turkey is the rub." I must say I agree with her on this one, this is the only way we cook our turkey now. The rub and injection are a great combination--I guarantee a moist, flavorful bird. Cooking times are estimated based on the size of your bird."

Questions & Replies

  1. Quick question...about the beer. Is that "twelve 24 oz bottles of beer"? Or 12 to 24 ounces of bottled beer? It took HOURS to reduce all of that beer down to one cup! I just want to make sure. Loved it once I finally got it cooked down. Thanks! Scott

  2. I have the same questions as some below. - Does it matter how much beer? -when do I inject? Right before frying? - Do I put the rub on both the skin and under the skin? Thanks Dean

  3. Is this real spicy, my grandkids don't like spicy!!

  4. I am going to try this recipe, but I would like to apply it to several large chicken breasts! How many times should I inject each breast, and also should I apply the rub to each chicken breast for 24 hours before hand, or will that be too intense based on size of meat? Additionally, instead of the liquids mentioned in the recipe can I use vinegar and olive oil with seasoning and blend all together in a blender to inject? Thank you!

  5. Hi. I'm going to try this recipe to fry my first turkey but I'm a little scared it might be too hottt?? Isnt the amount of cayenne of 1.5 tbsp a lot??

  1. I just used this recipe for the first time with my thanksgiving turkey in my oil less turkey fryer. I changed absolutely nothing with this recipe and that bad boy was DELICIOUS!! I was so impressed I am using it again tonight in my roaster oven on leg quarters. Thanks for sharing this recipe!

  2. WOW! I can’t believe this recipe only has 5 reviews (now 6). My husband and I were searching for a recipe for our new turkey fryer (which we didn’t get to use due to rain). We also didn’t get the chance to marinade it longer thank 30 mins to an hour before roasting in the oven. We did a 15.8 lb turkey, roasted at 350* for 3 hrs, 10 mins and IT. WAS. PERFECT! I don’t typically eat the skin but I did on this one! This was a trial run, a few days before Thanksgiving… I must say, I’m tempted to do it again in a few days for the whole family. It’s not too spicy for the little ones, either. Happy Holidays… thanks for the excellent recipe!

  3. Just fried two turkeys for Thanksgiving and it was a great success! Instead of beer, I used 2 cups of chicken stock & 1 cup of apple juice. (double recipe). Also reduced the amount of salt. Will use this again soon!

  4. I used this recipe as an injection to marinade a whole chicken. I added cumin, and apple juice to it. It was my first spatchcock chicken and it turned out sooo juicy and wonderful. I agree, I couldn't stop licking my fingers.

  5. My mom gave me an injector for Christmas. I was to excited to use it. Seeing how I received the morning of Christmas there was no time for marinating the turkey however the turkey was so delicious we couldn't stop nibbling on it. My mom and fiance are very hard to please however when both of them said this is GOOD...I knew this recipe was a keeper! I didn't fry, just put it in the roaster. For New Years I plan on using this recipe on a chicken I am going to put in the crock pot I am thinking I will have make 2 because I won't last very long. We didn't have bay leave so I used 1/4 tsp of thyme. D.E.L.I.C.O.U.S

  1. We made the turkey in the oven instead of frying it. It worked really well. It came out juicy and tasted.
