Fried Turkey Rub With Cajun Injection

RUB
- 59.14 ml chili powder
- 59.14 ml paprika
- 59.14 ml ground black pepper
- 29.58 ml salt
- 22.18 ml onion powder
- 22.18 ml garlic powder
- 22.18 ml cayenne powder

CAJUN INJECTION RECIPE (use 1/4 to 1/2 cup rub from above)
- 340.19-680.38 g bottled beer
- 2-3 bay leaves
- 9.85 ml crushed garlic
- 14.79-29.58 ml Worcestershire sauce
- 29.58 ml honey
- 59.14 ml louisiana hot sauce (optional)
directions
- Mix all rub ingredients together and apply ample quantities to the outside of the turkey. Let meat marinade for 8-24 hours.
- Combine injection recipe ingredients including 1/4 to 1/2 cup of the rub; boil and reduce to 1 cup. Cool and strain mixture then inject into all areas of the turkey.
- Fry turkey according to weight of bird and fryer instructions. DO NOT attempt this indoors or too close to a builidng.

I am going to try this recipe, but I would like to apply it to several large chicken breasts! How many times should I inject each breast, and also should I apply the rub to each chicken breast for 24 hours before hand, or will that be too intense based on size of meat? Additionally, instead of the liquids mentioned in the recipe can I use vinegar and olive oil with seasoning and blend all together in a blender to inject? Thank you!

WOW! I can’t believe this recipe only has 5 reviews (now 6). My husband and I were searching for a recipe for our new turkey fryer (which we didn’t get to use due to rain). We also didn’t get the chance to marinade it longer thank 30 mins to an hour before roasting in the oven. We did a 15.8 lb turkey, roasted at 350* for 3 hrs, 10 mins and IT. WAS. PERFECT! I don’t typically eat the skin but I did on this one! This was a trial run, a few days before Thanksgiving… I must say, I’m tempted to do it again in a few days for the whole family. It’s not too spicy for the little ones, either. Happy Holidays… thanks for the excellent recipe!

My mom gave me an injector for Christmas. I was to excited to use it. Seeing how I received the morning of Christmas there was no time for marinating the turkey however the turkey was so delicious we couldn't stop nibbling on it. My mom and fiance are very hard to please however when both of them said this is GOOD...I knew this recipe was a keeper! I didn't fry, just put it in the roaster. For New Years I plan on using this recipe on a chicken I am going to put in the crock pot I am thinking I will have make 2 because I won't last very long. We didn't have bay leave so I used 1/4 tsp of thyme. D.E.L.I.C.O.U.S
