Fried Yellow Squash

"This recipe is an old favorite. I am certain everyone prepares it this way at sometime or another. I can't imagine a summer that would pass without having this at least once a week when the harvest is in"

  • Wash squash thouroughly and dry. Slice into 1/4 inch rounds. Heat up the oil in a frying pan to medium.
  • Combine flour, pepper and parsley. Dust squash rounds with flour.
  • Combine milk and egg and whish thoroughly.
  • Dip the dusted squash into the egg mixture and coat to cover all the flour.
  • Pat squash into the remaining flour and put into hot oil. Fry til golden brown on the outside and cooked on the inside of squash. Set cooked squash on paper towels to drain.
  • Sprinkle with kosher salt and serve hot.

  1. Make sure skillet is hot before adding oil. Heat oil until a sprinkle of flour sizzles, then start frying. This method usually keeps the batter on fried foods.
     
  2. The flour double dip is the secret. The coating was perfect! I placed my flour mixture in a Ziploc bag and shook my squash in it to get an even coat, both before and after the wash. Less mess. Less dishes. Less work. Happy me.
     
  3. This was fabulous! Just like my mom used to make! I omitted the parsley flakes just as a matter of taste, and I added a teeny pinch of sugar to flour mixture because that's what my mom always did. This made a great light summer meal. Thank you for your wonderful recipe!

  5. These are even better than fried zucchini! I loved how easy they were to make. Serve with ranch or some hot sauce!

I live in Michigan. I work as an accountant and software engineer. My favorite cookbook is Betty Crockers New Cookbook and an old one by Hallmark called holiday cooking. I love to eat as much as I love to cook. However, I have become decidely a better nutritional cook than before. I don't just cook to eat. I cook to eat delicious "healthy" meals. I am also an exercise addict, to help combat when I do eat a dish full of cream and cheese. Well not the cheese because I am alergic to that as well as the cream! So I take a lot of great recipes on Zaar and doctor them up to meet my healthy standard. One of these days I should make them public, but... thats a lot of work.
