  • Combine egg yolks (save some of the whites), sugar, water, butter and molasses.
  • Add about 4 cups of the flour plus the cinnamon, ginger, baking soda and salt. Keep adding flour until you get a soft dough.
  • Roll 1/4 inch thick and cut into squares (or use cookie cutters, but squares are traditional).
  • Bake to a light brown at 350 degrees for about 11 minute
  • When cool, frost with egg whites (one or two that you saved) stiffened with powdered sugar. Should just be a thin glaze. Let dry thoroughly before putting away. These cookies freeze well.
