Frosted Raisin Squares

  • Pour boiling water over raisins.
  • Sprinkle with instant coffee and cinnamon.
  • Let cool.
  • Meanwhile, mix all batter ingredients together.
  • Pour liquid off raisins and add liquid to batter.
  • Mix well.
  • Add raisins to batter.
  • Pour mixture into jelly roll pan and bake for 20 minutes at 320 degrees F.
  • Let cool.
  • Meanwhile, make icing: Cream butter.
  • Add icing sugar.
  • Add milk, a little at a time, and blend well.
  • Blend in vanilla.
  • When cake is cool, frost with icing.
  • Sprinkle with chopped walnuts.
  • Cut into squares.

  3. These are really delicious and so soft. I used currants instead of raisins in mine and it worked well. I used a different frosting than the one in the recipe as I wanted more of a glaze than a frosting. This is a recipe that I will keep!
