Frosty Cranberry Dessert

  • In a medium whisk cream cheese until fluffy, then mix in pineapple, mayonnaise & sugar.
  • Fold in cranberry sauce & just 1/2 cup of the pecans, then stir in the whipped topping.
  • Spoon the mixture into muffin cups or ramekins, then cover with plastic wrap & freeze.
  • Thaw slightly before serving, & top with a sprinkling of chopped pecans.

  2. This was enjoyed a lot. It makes a lovely change from the usual heavy pies after one of the two heaviest meals of the year. I couldn't get the cranberry sauce to mix in well so I ended up putting it in the food processor (so much for the whole berries). It had a nice little tartness and the cream cheese smoothed it all wonderfully. This would really be terrific in the summer. Made for PRMR.
