Frozen Cookie-wiches

"Oh, the kids will LOVE these (and adults too!) I prefer to make homemade cookies (oatmeal raisin is the BEST!!), but you can also use refrigerated dough. You could probably even use store-bought cookies, but I have never tried that. These are so simple, and great to have stashed in the freezer for an instant snack or dessert. (Cook time does not include baking time for cookies)"

  • 1 (20 ounce) package pillsbury refrigerated cookie dough
  • Filling

  • 2 cups frozen whipped topping, thawed
  • 23 cup miniature marshmallow
  • 12 cup peanut butter or 1/2 cup butterscotch chips

directions

  • Combine filling ingredients and mix.
  • Prepare cookies, either homemade, or following package directions for refrigerated dough.
  • Let cookies cool completely.
  • Spread filling about 1/2-inch thick between 2 cookies.
  • Wrap individually and freeze at least 2 hours.
  • Store in freezer.

I am a single gal, living on my own; currently working as an Occupational Therapist & living in Cumberland, MD. (It is "God's Country" out here...beautiful!) I LOVE to cook and bake, and love anything that looks, tastes, smells, or even closely resembles a veggie. I LOVE moo-cows, and therefore, cannot bring myself to eat any part of the adorable critters (i.e. NO RED MEAT!!) I love the outdoors, and pride myself on being the master griller on the fire pit. My mother's side of the family is 100% Polish, so I have an inborn passion for cooking...unfortunately, along with that comes a love of eating, too!! But, hey..u only live once, so I say "EAT, DRINK, and BE MERRY!!!"
