Frozen Pumpkin Mousse Pie

  • Preheat oven to 350°F.
  • Grease or spray pie plate.
  • Combine graham crackers, melted butter and 1/4 cup brown sugar, mix well.
  • Press into bottom and sides of pie plate.
  • Bake for 12 minutes.
  • Remove from oven and cool (crust may be frozen at this point for later use).
  • Combine pumpkin, cinnamon, marshmallow creme and brown sugar-mix until smooth.
  • This is done easily with a mixer.
  • Fold in thawed whipped topping.
  • Spoon pumpkin mixture into crust and spread evenly.
  • Freeze for at least 4 hours.
  • May garnish pie with additional whipped cream.

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
