Fruit and Almond Muesli

"After I returned from Europe, I couldn't find a muesli recipe that was exactly what I had experienced there. After a little trial and error, I came up with this recipe which is close enough. I can make the basic mixture on Saturday. It's a good, healthy mixture that is quick to fix in the morning. I work full time and am not a morning person."

  • Preheat oven to 350 degrees.
  • Mix the oats and almonds and spread them on a cookie sheet.
  • Spray with butter spray and toss gently.
  • Place in oven and bake for 10 minutes. Then turn off oven and let the oats and almonds remain in oven for 30 minutes.
  • When completely cool, mix in the diced fruit.
  • Store in an airtight container.
  • To serve, place desired amount of muesli in a cereal bowl and mix with yogurt and honey. If a thinner mixture is desired, mix with a little milk.
