Fruit Fridge Cake Squares - No Bake

  • Melt margarine.
  • Add sugar and mixed dried fruit.
  • Boil gently for 10 minutes on low heat, stirring it so that it doesn't burn.
  • Remove from heat and add vanilla extract and beaten egg, stirring all the while so egg doesn't curdle.
  • Gently fold in the broken cookies.
  • Press into a 9" x 9" square pan.
  • Refrigerate and cut into squares when completely cool.
  • Store in the fridge.

  1. Ahh - this brought back memories! I didn't have all the fruit, nor did I have coconut cookies (oh for a Tennis Biscuit!), so I used one cup of light raisins, a 1/4 of a cup of coconut and a 1/4 cup candied orange peel. I added a tablespoon of syrup to the butter-sugar-fruit mixture and I used a plain vanilla cookie. It turned out really well - with a lovely caramel taste. Be careful when adding the egg - add slowly and stir rapidly (otherwise you will have scrambled eggs!).
     
  2. Fantastic recipe for a no bake fruit cake! Could play with different dried fruits and cookies.
     
  3. Made these for a walk down memory lane ... and they were a HUGE success in my 'new' homeland. Like the previous reviewer, I also used plain vanilla cookies ("biscuits" as we say at home...). I let the mixture cool for a few minutes before adding the egg - or indead, one does get scrambled eggs. And yes - stir like crazy when you add the egg.
