ingredients

  • 4 envelopes knox unflavored gelatin
  • 1 cup cold fruit juice
  • 3 cups fruit juice, heated to boiling
  • 2 tablespoons sugar (optional) or 2 tablespoons honey (optional)

directions

  • Sprinkle gelatin over cold juice in large bowl. Let stand one minute.
  • Add hot juice and stir until gelatin completely dissolves, about 5 minutes.
  • Stir in sugar or honey if desired.
  • Pour into 13x9x2 inch pan.
  • Refrigerate until firm, about 3 hours.
  • Cut into 1 inch squares and serve.

  1. Nutrition facts say 0 carbs - but fruit juice adds quite a bit of carbs carbs
     
  2. How do you store these afterwards? Do you refrigerate it or can it be on the shelf?are they a solid like gummies or wiggly like normal jello?

  1. We love this recipe! My daughter is on the Feingold program (she can't eat anything with artifical colors,flavors, etc) so we don't eat Jello and we've found this recipe not only a good replacement, we like it BETTER :-) Nothing is better than real food and this makes a great treat.
     
  2. I make this frequently for my kids, and I enjoy it, too. I discovered that replacing one cup of the sweeter juice with one cup of 100% cranberry juice enhances the flavor greatly and gives it more of a kick like the name brand dessert.
     
  3. These are great! They taste a lot like regular Knox Blox, just more fruity. Be sure your juice is really sweet, though, because my juice wasn't.

The pics are of my favorite band, Night Ranger. All pics of me were too large for the site...sorry! But since nranger7 is my name, it kinda fits to have a pic of them! I enjoy baking in my spare time. My coworkers love me because I regularly bring them cookies. I recently started dabbling in baking pies too. I've been told I should bake for a living, but I'm sure it wouldn't be as fun if I HAD to do it all the time! :)
