Fruitcake for Christmas

"I got this recipe off another website. It is very simple and easy to make. I brought it to work and everyone loved it. It is not a heavy fruitcake. It is light and moist. Enjoy"

  • Preheat oven to 225 degrees. Grease and flour two loaf pans.
  • In a large bowl, combine sugar, flour, soda, spices, eggs, lemon rind, vanilla, 1/2 cup brandy, fruit, nuts and butter. Mix thoroughly.
  • Pour into pans.
  • Bake for 1 hour. (I had to bake it for two hours.).
  • Wrap cooked cake in foil. Sprinkle 2 tablespoons brandy over the cake everyday for 2 weeks.
