  • Spray small frying pan with nonstick cooking spray, and add chopped onions . Cook on medium heat for 5 minutes, or until onions begin to brown.
  • Place onions,rice mix, chicken broth, dried cranberries, and dried apricots in slow cooker, include the seasonings from the rice package. Stir well to dissolve seasonings.
  • Cover and cook on high for 2 hours.
  • Just before serving sprinkle dish with the 1/2 cup toasted pecans, or other nuts.

  1. i made this in rice cooker worked great .didnt take 2 hours . the flavor was great , i would chop my apricots really small next time and not as many . personal preferance . and dont leave it on warm the fruit wants to burn .wonderful side dish
