Fruity Coleslaw

"Not your regular slaw - crunchy apples, sweet grapes,tart orange segments and toasted almonds makes this a bit special. No mayo here - yoghurt is the "dressing" making this recipe much lower in calories than your regular slaw. Chilling time is cooking time."

ingredients

  • 3 cups shredded cabbage (white or purple)
  • 1 cup shredded carrot
  • 1 orange, peeled and segmented (a can of mandarine segments work well)
  • 1 cup halved grapes (red or green)
  • 12 cup thinly sliced celery
  • 1 apple, cored and chopped fine
  • 1 12 cups apricots, lemon, orange or 1 1/2 cups vanilla flavoured yoghurt
  • 14 - 12 cup toasted slivered almonds (walnuts and pecans work well too)

directions

  • In a large bowl mix all the ingredients except the almonds. Mix well and chill for 2 - 24 hours.
  • Toss through almonds just before serving.
  • As a note - canned pineapple is nice in this too.
  • Best served with chicken or fish.

I have a severe egg allergy and am lactose intolerant, I&nbsp;enjoy working out ways to still enjoy food minus eggs and milk. I have been married for 14 years and have one very happy and well fed hubby.<br />My goal is to try one new recipe a week, for the past 8 years have achieved this. &nbsp;I own over 300 cookbooks, but no longer purchase them - but regularly print out recipes to try later.<br />When I am not cooking, I am busy household of 6 and going to the gym (to work off the wonderful calories I consumed the day before) and helping at school and church.<br />My philosophy in life is: as we have to eat, we may as well eat well.</p>
