  • Saute onion in butter until soft but not brown.
  • Stir in rice, raisins, currants and apricots and cook for 4 minutes.
  • Remove from heat and cool.
  • Stir in pine nuts, lemon rind, juice, salt, and pepper.
  • Bind with beaten egg.
