60 bite size brownies
ingredients
- 236.59 ml butter
- 113.39 g baker's unsweetened chocolate squares
- 473.18 ml sugar
- 4 eggs
- 236.59 ml flour
- 236.59 ml semi-sweet chocolate chips
directions
- Preheat oven to 375.
- Melt butter and baker's chocolate until smooth.
- Mix in sugar and eggs.
- Fold in flour and chocolate chips and mix only until combined (the less mixing, the more moist).
- For bites, fill each tartlet to top.
- Cook for 15 minutes.
- Cool 5-10 minutes and pop out to finish cooling on wire racks.
- Repeat until all the batter is cooked.
- For pan brownies, grease 9X13 pan and pour in mixture.
- Bake 20-25 minutes.

Everybody loved these. First time we cut the sugar to 1 1/2 cups and baked in mini muffin pan (using mini muffin papers) at 325 for 11 minutes. It seemed they were partially cooked on the stove so it did not need that much oven time. We removed from the oven and as waiting around 15 minutes for the trays to cool a bit before popping them out. The second time, we cut the butter to 2/3 of a cup and kept the sugar at 1 1/2 cup, also still cooked at 325. Main thing we found was to have all ingrediants on hand before starting and the second the butter and choc are melted put in the sugar and eggs and once they are stired in completely put in the flour and choc chips. I used a Kitchenaid ceramic clad iron casserole pot for cooking as it was nice even heat switching between medium low and low heat. We sprinkled a light bit of powdered sugar on top just to give them a pretty finished look.

This recipe made 42 mini muffin size brownies. They are very, very good. However, I added about 1/4 t. salt and 1/2 t. pure vanilla extract so I'm not sure if the recipe without those 2, what I consider essential brownie ingredients, would be as good. Seems like the other reviewers liked the recipe as written so I guess they are good without those 2 ingredients. I looked up other mini muffin brownie recipes and their bake temperature was closer to 325 degrees or 350 degrees. Bake time at those temperatures was about 11 minutes.

I'm not a gourmet cook, but I enjoy cooking quite a bit. Especially desserts and home made, whole wheat bread. I'm learning to love international foods (Brazillian black beans and rice, hummus and lentils, southeast asian...).
