Full Meal Quesadilla

"This can be made with any fully cooked chicken, I use Once A Week Chicken. I also use Amy's brand refried beans because they are lower in fat than brands made with lard. Fresh Mushrooms are best, canned ones are too wet. I usually make 3 of these when the kids and I have them for dinner"

  • Melt 1 tbsp butter in a 12 inch cast iron pan.
  • Saute onions, peppers, and mushrooms.
  • While these cook place tortilla on a plate, spread beans and chicken on one half and top with cheese.
  • When the veggie in the pan are browned and soft carefully pour them over the cheese.
  • Put the remaining butter in the pan (optional, this helps brown the tortilla).
  • Fold the tortilla in half and place in pan.
  • Heat for about 1 minute on each side.
  • Cut into 4 wedges and serve with salsa.

  1. Loved this idea, I changed it a bit to suit our family. I left out the chicken (so we can have a meat free meal), added coriander (cilantro) and salsa. I reduced the butter to 1 teaspoon in total. I made enough to feed our family - a hit. We love quesadilla's and this one is great. Very filling, we served it with a simple salad. thanks1 Elizabeth
     
  2. Muy beuno!! 5 stars all the way! I tripled the amounts to feed 3 adults and we were stuffed and very happy. The one thing I added was a slice of crisp crumbled bacon to each quesadilla, since our local Mexican place uses it in theirs. Loved the refried beans, too. I live in the northeastern US I am a stay at home mom. My kids are 11, 9, 3.5, and 1.5 My hubby is back from his 3 month internship in MA. We all went to see Boston, for some reason the people of MA don't feel the need to post rout markers on their highways. I am accustomed to knowing every 10th of a mile what highway I am on and where on it I am. Thank goodness for audio books, but if I ever have to listen to Charlie and the Chocolate factory again I may do Eric Idle some form of spam induced harm. (Just kidding don't turn me in to the men in white coats yet.) I used to say that I have too many favorite cook books to list, but now I will have to say that Recipezaar is my favorite cookbook. We have implemented a rule at the book store, we cannot buy another cook book until we make at least one thing from the last one we bought. I would love to move somewhere truly interesting, or at least to travel. Don't get me started on my pet peeves. I have removed them because they were too grouchy, I really am a happy person so lets just say I think people need to think more, have more self respect, more respect and responsibility to others and to dress and behave like civilized people should. Also if you live in a big city, please let people merge on the highway.
