Fully-Loaded Cajun Chicken Burgers

"These delicious burgers make a nice change from the more conventional beef burger. So simple to prepare and really tasty too! Obviously you don't need to use the bacon, cheese, avocado etc, but it is rather nice with them all included!"

  • Mix the Cajun seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt. Set aside in a large dish.
  • Gently flatten out the chicken (bash it gently with a rolling pin between two pieces of cling film), then drizzle with half of the oil and toss into the seasoning until completely coated.
  • Heat the remaining oil in a large frying pan. Sizzle the chicken for 5 minutes on each side, until firm. Push to one side of the pan, then fry the bacon for a few minutes until cooked (of course you could always grill it!).
  • While the chicken is cooking, halve, stone, peel and slice the avocados. Cut the ciabattas in half and toast the cut side of the buns. Cover the tops of the buns with cheese and grill until melted.
  • Spread the bottom half of the bun with mayo (if using). Top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken then alternate between a slice of avocado and chicken (I just cut almost through the chicken and push a slice of avocado into it).
  • Top with the bun with melted cheese,press down lightly and serve with your favourite fries and salad!

  4. A lovely change of pace for a burger thanks Noo. I made a couple of little changes......used a large crusty burger bun and left the salad leaves on the side to serve as I ate the burger. I assembled it avocado, chicken, bacon and then cheese - used Emmanthal cheese slices......at these for lunch with a bean salad and green side salad.   5. We loved these !! I did griil these, as I prepared the avocados in advance. After grilling the chicken I brushed the oil on them, the seasonings were just right too. I topped off with swiss cheese, along with grilling the bacon. Will make again. Made for PRMR tag.

Tweaks

  1. I made these exactly as directed except used regular hamburger buns instead of ciabatta rolls. My husband and I both really enjoyed these. Cumin is my favorite spice so I really enjoyed that in the seasoning mix. For the cheese we put provolone on some and swiss on others. The flavors are so nice -- it was a great alternative to a regular old hamburger. Thanks so much for posting!! Made for Please Review My Recipe Tag.
     
  2. This made for a very enjoyable and filling dinner with a mixed reaction to the spice mix. I served on wholemeal country grain rolls and used a mix of swiss and vintage tasty cheese and used baby lettuce leaves in place of the spinach and let people add tomatoe, grated carrot and sliced red onion if they wished. I also slit 4 thick chickens breasts in half and spiced 3 of them and left 1 unspiced, for the DM (leaving me 4 halfs for another meal), rather than pounding out as the breasts were so thick. We cooked the chicken on a flat plate grill (indoors) and 3 had the avocado (still had some left over from 1 avocado sliced) and used the mayonnaise option. The DH has requested yes again with mods, definately just swiss cheese and a change to the quantities of the spice mix, just hasn't specified change until ready to make - sorry.
