- Preheat oven to 350-degrees F.
- Grease 8-inch pie pan.
- Combine sugar and butter and mix well in a large bowl.
- Add eggs, then flour, cocoa and vanilla, stirring well after each addition.
- Stir in pecans.
- Pour mixture into pie pan.
- Bake for 20-25 minutes or until set.
- Cool and garnish with whipped cream and chocolate, if desired.

For a quick and easy pie, this was very tasty. I made it with Splenda (making this low-carb) and otherwise followed the mixing directions. I liked not having to melt chocolate, which did make them kid-friendly, too. I placed filling in mini-muffin pans and cute little chocolate morsels (made 20) popped right out of the pans. It did not make a crust, as stated, but they didn't need one. Thanks for the recipe, Ellie!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes.
