ingredients
- 2 cups small cubed ham
- 3 carrots, grated
- 1 large onion, chopped
- 1 bell pepper, chopped
- 3 cups cooked rice
- catsup
directions
- Saute onions,carrots& peppers until tender but crunchy.
- add ham& heat thouroughly.
- add rice& mix well.
- add enough catsup to turn the rice pink.

I was hoping this would go over well, but DH didn't like it and I thought it was ok but the ketchup flavor with everything else didn't bode well for me. However - I think this is a really good kid-pleaser. My 1 year old gobbled it up and I think my extremely picky 3 y/o might like it if she'll ever try it. -
I made this yesterday morning for a baby shower and everyoneloved it. It's one of those "less is more" dishes. It was super easy to make and I'll definitely make it again.
