Gahboo's Bread and Butter Pickles

  • Combine cucumbers, onion, green pepper, red pepper, and garlic.
  • Layer mixture, salt and cracked ice in a large bowl.
  • Let stand covered 3 hours, then drain in collander, but do not rinse.
  • Remove garlic cloves, and combine all remaining ingredients in large stock pot.
  • Bring to boiling, then remove from heat.
  • Fill hot pint jars leaving 1/2" headspace, remove bubbles.
  • Adjust lids and process in boiling water bath for 5 minutes (begin timing after boil returns).
  • Remove and cool.
