Garbanzo Pesto Dip

"I had some already prepared pesto sauce from a mix and wanted to make something with garbanzo beans. Who knew Bush Beans had a recipe that combined the two? You can use this as an appetizer or as a sandwich spread. I added a little basil because I didn't have basil pesto sauce, but there are recipes on zaar for the exact thing if you want to make your own. This is an excellent dip that took me by surprise. Surprise your guests too and see if they can guess the ingredients. Serving size is estimated because it wasn't listed."

  • Coarsely mash garbanzo beans with a fork or pastry blender.
  • Stir in sour cream, pesto, red pepper, lemon juice, and black pepper.
  • Cover and refrigerate for 1 to 2 hours.
  • Serve with assorted crackers and cut up fresh vegetables.
