  • In large skillet, melt butter and saute' the onion, bell pepper and garlic till soft.
  • add squash and cook briefly before stirring in corn, tomatoes and seasonings.
  • cook a couple more minutes and put into a buttered 3 qt casserole dish, add water.
  • bake covered for 30 minutes @ 350 degrees F.
  • remove cover and bake another 30 minutes.
