- 8 tomatoes
- 2 cucumbers
- 3 -4 carrots
- 1 medium onion
- 2 green bell peppers
- 1⁄2 head cauliflower
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 4 teaspoons sugar
- 4 teaspoons vinegar
directions
- Clean and cut vegetables into small chunks and put in large bowl.
- Add seasonings, sugar and vinegar and stir well.
- Refrigerate at least 1 to 2 hours to blend the flavors.
- The salad makes its own"dressing" from the juices.

This marinated veggie salad is terrific for summer's fresh produce. My tomatoes were very large so I only used three. I did add a few other spices to the dressing mixture and I think with a salad like this the variations are endless. This would be perfect for a backyard party or picnic. Thank you for sharing your recipe!
