Garlic Broccoli With Cranberries

"This takes only minutes to make and is a healthy, but yummy alternative to a side dish. Your kids will eat this any day over plain broccoli! This recipe uses dried cranberries and is just super! Sometimes I add cooked pasta for a filler, and I'll add 2 cups cooked, chopped chicken for a complete meal!"

  • Heat oil in large skillet over medium heat.
  • Add garlic and sauté 1 minute.
  • Add broccoli and cranberries, sauté 5 minutes or until broccoli is crisp and tender.
  • Season to taste with salt and pepper.
  • Serve warm or cold.
  • ***Add chicken and or pasta to make a meal.

  1. Featured in my Book#237470. Originally reviewed on Mar. 15, 2008. DH and I loved the combination of flavors-the dried cranberries really compliment the broccoli. DH is crazy about broccoli so it is wonderful to have another broccoli recipe. It is fast and easy and I always have the ingredients on hand. I always like red and green together-(and I am not Italian). Thank you Melvin's Wife for another keeper:) I made for the Every Day Is A Holiday Tag.

  3. SUPER! Doubled the cranberries. Kids and adults loved this. I increased the gralic but followed as stated. Such a delicious pairing. The roasted garlic flavor mixed with the cranberries was incredible. My new go-to.

I started cooking just by helping my Mom out in the kitchen as a little girl. I preferred baking over cooking, as I loved getting all into measuring things and stirring. I always got to stir! However in the past 5 years I've been the one responsible for making nightly dinners. At first this consisted of the same 10 or so dishes in a constant rotation, but that quickly became boring and I remembered how much my Mom would complain when I was younger about how she always made the same things and she never knew what new dishes to try! Obviously 20 years ago, Zaar wasn't around! I still cook a lot of the same type of dishes my Mom cooked when we were younger and I try to incorporate as much fresh fruit, vegetables, and herbs into my meals as possible. However Melvin's favorite food of all time is fried chicken so... I make sure he gets a fresh vegetable on the side! My favorite cook book is my staple cookbook which is the old red and white Better Homes Cook Book.
