Garlic Cheese Chicken Roll Ups

- 4 boneless skinless chicken breast halves
- 1 (5 1/4 ounce) container boursin garlic & herb spreadable cheese
- 2 tablespoons butter
- 1 onion, thinly sliced
- 6 -8 ounces mushrooms, sliced
- 1⁄3 cup sour cream
- 1⁄4 cup white wine
- 1 teaspoon horseradish
directions
- Pound each breast half until thin. Sprinkle with your favorite season salt and pepper. Spread 2 T boursin cheese over each piece. Roll up and secure with a toothpick.
- Melt butter over medium heat, add onions and saute until soft - remove. Increase heat to medium high, you may need to add a bit of olive oil to the pan, and add chicken. Cook breasts until lightly brown all over.
- Reduce heat and add the onions, mushrooms, and wine. Cook 5-10 minutes. Stir in the sour cream and horseradish.
- Serve over rice.
