Garlic Chicken

  • Combine yogurt, juice, garlic, 1/4 teaspoon salt, 1/4 teaspoon pepper, cardamon, cumin, cinnamon, and nutmeg in a large zip top plastic bag.
  • Add the chicken; seal.
  • Marinate in refrigerator overnight, turning bag occasionally.
  • Remove chicken from bag, RESERVING marinade: pat chickn dry with paper towels.
  • Combine reserved marinade and broth.
  • Heat oil in a large nonstick skillet over medium high heat.
  • Sprinkle with remaining 1/4 teaspoon salt and remaining 1/4 teaspoon pepper.
  • Add half of the chicken to pan; cook 1 1/2 minutes on each side or until browned.
  • Repeat procedure with remaining chicken.
  • Return chicken to pan: pour broth mixture over chicken.
  • Bring to a boil.
  • Cover, reduce heat, and simmer 12 minutes or until chicken is done.
  • Place chicken on a serving platter: discard liquid in pan.
  • Sprinkle chicken with parsley.

  1. For me this is a 5 star recipe. I adore North African flavors and this fits that cuisine so I knew it was going to be a winner. This is truly excellent for a 45 min dish, the ingredients work beautifully together and create a lovely and memorable (in a very good way) dish. I'm so pleased that I came across this as I usually have all the ingredients on hand and I'll certainly be making it again. :D
     
  2. this was tasty, but i expected more oomph. the flavors do blend quite nicely, and improve the next day. i did not discard the yogurt mixture, but rather reduced it down, and although not a perfectly smooth sauce, it still works. making this again, it would be with smaller pieces of chicken, i think the flavors might penetrate better that way. thanks!
     
  3. At first I wasn't sure what to think of this dish but the more I ate the more I liked it. I got mixed reviews from others but I thought it was pretty tasty and since I do the reviewing I am giving this 4 stars. Thanks for an interesting dinner for us
     
  4. This was AMAZING! Do not be tempted to leave ONE spice out of the mixture either, as the combination of flavours was utterly divine and full of Eastern Promise! I cut this recipe back for the two of us - one portion for today and one for tomorrow. We are this today with crispy fried veggies with a light dressing, totally delicious. I garnished it with fresh chopped parsley and will make this recipe again in the future, merci WiGal darlink! Made for Phase 2 of T,Y and M. A keeper! Merci, FT:-)
