Garlic, Chickpea & Spinach Soup

  • Heat the oil in a saucepan and cook the garlic and onions until soft and golden.
  • Stir in the cumin and coriander and cook for one minute.
  • Add the stock and potatoes.
  • Bring to a boil and simmer for 10 minutes.
  • Add chickpeas and simmer for another 5 minutes or until potatoes are tender.
  • Mix the cornflour, cream and tahini together.
  • Stir into the soup with the spinach.
  • Season with salt and pepper to taste.
  • Bring to the boil, stirring and simmering for another 2 minutes.
  • Sprinkle with cayenne pepper before serving.

  1. Another great soup Friedel, come live at my house and cook me soup please! Had guests for lunch today and served this (doubled the recipe). Only change I made was to omit the cornstarch-I felt that with all the stuff in it, including the potatoes, it was naturally thick enough. It's just as Friedel say, subtle, garlicky, creamy, yummy!
     
  2. I tried this tonight for dinner as I needed to use up some of the spinach from the garden. It was really good. Everyone liked it! I did make a few changes tho. I added 2 celery stalks, I left out the coriander, as I didn't have any, and I didn't add any double cream as I can't have dairy. Even without the cream the soup was very thick and "creamy". Definitely a keeper!

  4. I can't get enough of this soup! I have an empty soup bowl in front of me as I type (and that was my second helping).<br/><br/>I've just made it for about the fourth time. I have this recipe in a veggie cookbook but thought I'd see if it had made it up here to zaar (as I still think of this place) because I want to urge as many people as possible to try it.<br/><br/>The only thing I do to deviate from recipe as written is put in double the amount of potato.<br/><br/>Awesome!

  1. I use chicken broth instead of vegetable, my family loves this soup!
     
  2. Delicious! My husband said, "Put this on your list to make again!" To reduce the fat content, I used skim milk instead of cream.
     
  3. We loved it! I did use milk instead of cream. It looked devine and smelled even better. A tasty soup on a cold winter day!
     
  4. This was very delicious! I left off the coriander because I didn't have any, and substituted milk for the cream to cut calories and fat. Oh- and I used sesame oil instead of the tahini. It was very flavourful and an excellent choice for lunch- filling and light at the same time. Thanks so much for this one!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Right now we are travelling around the world on our bicycles, so I only pop onto Zaar occasionally, when internet connections and time allow me to. If I don't reply to a message about one of my recipes, now you know why! Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
