Garlic Fettuccine Salad

ingredients
- 1 lb fettuccine
- 1 cup frozen corn, cooked and drained
- 3⁄4 cup mayonnaise
- 1 tablespoon Dijon mustard (or Dijonnaise)
- 1 -3 fresh garlic clove, minced (to taste)
- 1⁄4 cup chopped green onion top
- 1⁄3 cup grated fresh parmesan cheese
- 1⁄2 teaspoon fresh coarse ground black pepper
- 1⁄2 teaspoon salt
directions
- Cook pasta according to package directions for al dente; drain, rinse, and drain again and place in a large bowl.
- Cook corn while pasta water is heating; drain and set aside to cool.
- In a medium bowl, combine mayonnaise, Dijon mustard, and minced garlic and mix well.
- Add rest of ingredients, including corn and stir.
- Add dressing to fettuccine and toss to coat. Chill.

My favorite thing to do has always been cooking, especially one pot meals like soups, stews, and chili that can be served with crackers, homemade crusty bread, or cornbread. Of course I cook other things; love to barbecue and love Mexican food, but the one pot meals are my favorite and most comforting, especially in the cooler months.</p>
