Garlic Fettuccine Salad

"Garlic lovers will like this simple pasta salad. Years ago, a salad and soup type restaurant that I used to frequent served a version of this and I tried to copy it. This is my version."

  • Cook pasta according to package directions for al dente; drain, rinse, and drain again and place in a large bowl.
  • Cook corn while pasta water is heating; drain and set aside to cool.
  • In a medium bowl, combine mayonnaise, Dijon mustard, and minced garlic and mix well.
  • Add rest of ingredients, including corn and stir.
  • Add dressing to fettuccine and toss to coat. Chill.

<p>I'm 59 and have lived in East Texas for 14 years, having lived most of my life in the Dallas area. My favorite thing to do has always been cooking, especially one pot meals like soups, stews, and chili that can be served with crackers, homemade crusty bread, or cornbread. Of course I cook other things; love to barbecue and love Mexican food, but the one pot meals are my favorite and most comforting, especially in the cooler months.</p>
