Directions

  1. Heat the olive oil in a skillet over medium high heat. Add the shallots and garlic and cook for 1 minute.
  2. Add the scallops and sear until done (about 3 minutes per side).
  3. Remove from pan and add the zucchini noodles. Stir and cook noodles coating with the garlic and oil mixture. Season with salt and pepper.
  4. Serve the noodles with the scallops and top with the fresh basil.
