  1. Pre heat oven to 450 degrees.
  2. Wash and quarter potatoes. Peel and half the garlic cloves.
  3. Place potatoes and garlic cloves in a large bowl, cover with oil, and toss with herbs, salt, and pepper.
  4. Place everything on the baking sheet and place in the oven for 15 minutes.
  5. Pull from the oven, rearrange , and place in the oven for another 15 minutes or until tender.
