Garlic Soup With Potatoes and Cumin

"This is a pretty tasty soup. The addition of egg yolks may seem a bit strange, but they really make a rich broth (and maybe a slightly unhealthy soup...sigh)."

  • Place garlic, water, olive oil, salt, bay leaf, and sage in a soup pot. Bring to a boil, reduce heat, and simmer for 15 minutes.
  • Add salt and pepper, and remove the herbs. Add potatoes and cumin, and simmer for 10 minutes, or until the potatoes are tender.
  • Beat the egg yolks in a bowl, and beat half of the broth into the yolks. Add the yolk mixture to the pot, heat through (don't boil, or the yolks will curdle), and serve sprinkled with cheese.

  1. OK...I was a bit skeptical at first, but WOW this was tasty! Here is how I made it: I didn't have vegetable broth so I used homemade chicken broth instead. We are garlic FREAKS so I used a little bit more than a whole bud of garlic instead of the 4 cloves recommended. Also, I used a stick blender to 'cream' the soup just before I added the yolks. Absolutely EXCELLENT! This one goes into my 'Keeper' cookbook! Thanks for posting!
     
  2. Yes, this is very tasty. I used the optional sage leaves. I didn't use near 1 tsp of salt and it was enough for me. Loved the richness that the egg yolks give. Thanx for sharing. I'll make this again.

I wandered onto Recipezaar less than a year ago, looking for a lentil soup recipe. I'm pretty sure I haven't left the computer since then...I've been completely sucked in by this site! Of course, I do take the occasional break to actually cook the recipes I find. When I'm not at my computer or in the kitchen, I'm working toward my PhD in clinical psychology from Kent State. I also work as a therapist at the campus clinic, teach a class (Social Psychology this semester), and work as a research assistant. I'm a little bit busy. I do usually find time every day to cook something for myself with the help of this site, and to exercise (to counteract the effects of the great recipes I find here). I don't have much time in my life for hobbies at the moment (sigh), but I seem to recall that I used to like reading, going to see musical performances, and watching movies. I still do my best to travel as much as possible. My sister, Kate, my boyfriend, Jake, and my friend, Kris, are my favorite travel partners. Kate and I go on an "eatacation" every year.
