Garlic Walnut Green Beans

"This recipe was on a bag of garlic bulbs at a produce stand in the state of Washington. Green beans are not always my favorite vegetable, but this recipe makes them very tasty."

  • Wash and cut green beans.
  • Steam until al dente.
  • Meanwhile, put peeled garlic cloves, bouillon cube, salt and pepper, and olive oil in blender.
  • Blend until smooth.
  • Drain green beans.
  • Pour oil over beans and toss to coat.
  • Mix in nuts.

  1. Most garlicy and tasty green beans! We loved them. I did by accident blend the nuts with the dressing, resulting in a pesto type sauce, which was wonderfully tasty. When reviewing the recipe I realised the nuts where supposed to be added whole. I will, next time, and perhaps toast them first, like some other viewers. I also left the salt out, was perfect.
     
  2. I cut down the oil, left out the salt and only used 1/4 cup walnuts. The next time I will cut back on the garlic to 3 or 4 cloves. I must say that these were much better when they were reheated the next day.
     
  3. These were the best green beans I have EVER had. Toast the walnuts for a nuttier flavor, please! I honestly don't think I will ever prepare beans any other way. Outstanding...exceptional...ambrosia on a plate. Perfect.
     
  4. Woo-hoo! I could eat a giant bowl full of these and nothing else for dinner. But, I did serve these with pork chops and Zesty Oven Fries #74730. I toasted the walnuts before adding, other than that followed recipe exactly. These flavors just throw a party for your mouth! Hubby, son and I LOVED this. Thanks for sharing!
     
  5. Absolutely wonderful. I did cut the oil down to 3T and toasted the walnuts. I keep chicken broth powder on hand and it is a positively delicious addition to the beans. Great trick.

I am the mother of 6 (only 5 of whom I birthed), and the grandmother of 10. Since my children were born in ’70, ’73, ’80, ’85, and ’90, I have always had kids in different stages of life; so my life has never been boring. I homeschooled the youngest 3 for 15 years(which I really really enjoyed), but my youngest daughter is now going to the University of Hawaii. The next oldest daughter is a theater manager and English teacher in Seattle. Our 4 sons are are all merried, living in West Virginia, Nevada, and Oregan and are the parents of all our grandchildren .I did the Cub Scout leader a long time ago; then the Girl Scout leader and like that a lot better. I also love to garden and to cook. I started cooking in grade school, was fixing dinner every night as my “family chore” by the time I was in junior high, and have been enjoying it ever since. I think when you enjoy cooking, it is contagious. My married sons both share some of the cooking with their wives; my college daughter has enjoyed putting on Sunday Suppers in her dorm. Reading is also a favorite pastime, but my “reading” is done via books on tape since I am legally blind. I love Zarr because it allows me access to so many recipes, as well as the benefit of others’ experiences (thanks to modern technology and a specialty computer software program designed for the blind and visually impaired. My husband (DH is an understated term) and I are involved in our church choir together, enjoy traveling, visiting friends around the country, and taking our grandchildren and Girl Scouts camping.
