Garlicky Barley Vegetable Chicken Soup for One or Two

"This is from the new Cinch Yourself cookbook. I can all my own tomatoes and I think that gives this dish a little extra great taste. This is a great dish for leftover barley. It will require more time if you have to cook the barley."

  1. This was a really excellent soup that made me feel really healthy while eating it. I did change things up a little bit. First of all, I doubled the ingredients so that I would have a healthy batch. Then, after adding the tomatoes and the broth, I added 1 cup of uncooked barley, brought it to a boil, and then simmered for 30 minutes. Obviously, I added too much barley, so I ended up adding about 1-1/2 cups of water. I also seasoned with salt and pepper. The end result was delightful! Thanks for sharing this nutritious and filling soup. Made for Holiday Tag game.
