  • In a bowl combine the first 7 ingredients, stirring to mix.
  • Set aside 1 to 2 cups of this veggie mixture, then place the remaining amount of the mixture, along with the soaked bread & 1/2 cup of water, in a blender container & process until smooth.
  • Put the liquified mixture into a bowl, add salt & pepper to taste, then leave it to chill at least an hour.
  • When ready to serve ~ the colder the better ~ combine the unprocessed veggies with the liquified veggies & mix well before serving.
