  • Combine chili paste, crushed red pepper, garlic, thai chili sauce, soy sauce, sherry, sugar and reduce into a sauce.
  • Saute chili pods in peanut oil, cook chicken in chili oil mixture.
  • Add sauce and simmer chicken pieces in sauce until done, serve.

  1. I would have given this recipe four stars if not for the call for 1/4 cup red pepper flakes. I made the sauce following directions exactly, but I had second thoughts about putting in that much red pepper flakes, so I tasted the sauce before pouring over chicken, and I'm glad I did. It tasted really good, but if I had served it like that, the amount of pepper flakes may have killed someone. I put the sauce through a sieve, which got rid of all but about a tablespoon of the flakes. That minor adjustment made all the difference in the world. The dish was really delicious. Unless you have an asbestos mouth (and stomach), I highly recommend cutting the red pepper flakes to about a tablespoon.
