  • Cut meat into large chunks.
  • Place in a heavy pot and add water to barely cover.
  • Simmer more than an hour.
  • When the meat is very tender, drain and reserve any broth.
  • Grind the meat with a coarse hand grinder or chop finely.
  • (Using a food processor destroys the texture.) Grind one large onion.
  • Place onion and the meat back into the pot and add one large can of tomatoes-juice and all.
  • Add corn, vinegar and seasonings.
  • Simmer a few minutes.
  • Add the reserved broth to the meat until it reaches the consistency of stew.
  • Serve it over white rice or bread with dill pickles on the side as a condiment.

  1. I cut this in half because the quantity is so large. I thought it was delicious. It took a tremendous amount of convincing to get my son and husband to try this, because they thought it looked terrible (men are so weird), but once they did, they also loved it. I served it over rice, although personally I preferred it on its own.
     
  2. cut out the corn. boil diced potatoes & chopped onions in meat stock. add a little black pepper, dry mustard. grind meat, onions & potatoes. add tomatoes. add half stock & half tomato juice til you reach the consistency you like. keep it loose & let it thicken as tou cook. stir, stir. stir. at least 2 hrs or use a pressure cooker. if it sticks , it will burn & you might as well toss it out

  4. This is absolutely wonderful! My dad made is Memorial Day wknd and I am making it for the 4th. Nothing went to waste. I can't wait until this winter when I can make it a little spicy and serve it as a stew....Yum!
     
  5. While this is most likely a delicious recipe it is not a real GA BBQ Hash recipe. Once you start to add corn you are making a Brunswick stew. I do like a good Brunswick stew.

  1. use a pork shoulder, whole chicken & small chuck roast, ration about 6 pork 2 beef & 2 chicken. boil til it comes off the bone. pick bones & connective tissue . grind with potatoes & onions
