German Apple Cake

ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 3 teaspoons baking powder
- 4 eggs (well beaten)
- 2 cups granulated sugar
- 1⁄2 cup orange juice
- 1 teaspoon orange zest
- 1 cup vegetable oil
- 2 1⁄2 teaspoons vanilla extract
- 4 cups thinly sliced peeled apples
- 2 teaspoons ground cinnamon
- 3 tablespoons granulated sugar
- 2 -3 teaspoons confectioners' sugar (optional)
directions
- Combine the first three ingredients, then set aside.
- In a large bowl, combine the eggs and sugar.
- In a small bowl combine the oil, orange juice, and orange zest.
- Alternately add the juice mixture with dry ingredients to egg mixture.
- Beat until smooth; then add vanilla and blend.
- Pour half of the batter into a greased and floured tube or bundt pan.
- Arrange half the apples over the batter.
- Combine the 2 teaspoons of cinnamon and the 3 Tablespoons sugar.
- Sprinkle half over the apples.
- Top with remaining batter.
- Arrange the remaining apples over the top.
- Sprinkle the remaining cinnamon and sugar on top.
- Bake at 350° for 1 hour and 10 minutes or until a toothpick.
- inserted near the center comes out clean.
- Cool for 1 hour before removing from pan.
- Cool, apple side up, on a wire rack.
- Sprinkle top with confectioners' sugar if desired.
