German Bean Sprout Stir Fry

- 4 slices bacon (chopped in small pieces)
- 1 tablespoon cornstarch
- 1 tablespoon water
- 3 tablespoons Italian dressing
- 1 tablespoon vinegar
- 1 (12 ounce) package fresh bean sprouts
- 1 tablespoon soy sauce
- chopped parsley
- salt (optional)
- pepper (optional)
directions
- Fry bacon until crisp.
- Meanwhile, mix cornstarch and water in a small bowl.
- Mix dressing and vinegar in a separate bowl.
- When bacon is cooked, drain grease from pan.
- Add bean sprouts to pan with bacon, and salt and pepper, if desired. Stir fry for 2 minutes.
- Stir in dressing mixture and soy sauce; then stir in cornstarch mixture. Do not overcook.
- Remove from pan and sprinkle with parsley.
- Serve immediately.

With 5 kids and a hungry husband to feed, I'm always looking for good, budget friendly meals. We generally eat meals that use little meat (I try to use 1 lb or less per dinner, and none the rest of day), so that means lots of casseroles and meats with gravy.
I enjoy baking, so bread recipes and desserts tend to get saved more frequently than others. I'm especially partial to chocolate and lemon (although not together).
