  • Heat the oven to 425.
  • Melt the butter in a 10 inch, ovenproof skillet (cast iron is best; I've also used a pie pan).
  • Add the remaining ingredients and stir to blend.
  • Bake 12-15 minutes, or until risen and golden.
  • Serve with powdered sugar, brown sugar, jam, syrup- whatever suits your fancy.
