- Simmer potatoes in jackets until tender; peel and slice thin. Fry bacon until crisp; add onion and cook 1 minute. Blend in flour, salt, sugar and pepper. Stir in vinegar and water. Cook 10 minutes, stirring occasionally. Pour bacon mixture over warm potatoes. Serve warm.
