German Reuben Casserole

- 6 medium potatoes, approximately 1 1/2 pounds
- 2 (16 ounce) cans sauerkraut, drained
- 1 lb smoked sausage, thinly sliced
- 1 cup thousand island dressing
- 4 tablespoons parsley flakes
- 1 teaspoon caraway seed
- 1⁄8 teaspoon black pepper
- 1 1⁄2 cups swiss cheese, shredded
- 1 green pepper, cut into strips
directions
- Peel, dice, and cook potatoes.
- In a large bowl, combine all ingredients except for the Swiss cheese and green pepper.
- Gently stir to combine.
- Spoon into greased 9x13-inch oven-proof glass baking dish. Cover and bake at 350 degrees for 25 to 30 minutes.
- Uncover, and sprinkle with green pepper strips and Swiss cheese.
- Bake, uncovered, for 5-10 minutes more.
