  1. Combine vinegar and cayenne powder and toss the meat in it.
  2. Add yoghurt, ginger, chillis and marinate over night.
  3. heat oil in large frying pan over a low heat, add ghee, pork, marinade, black pepper, turmeric, water and a pinch of salt.
  4. bring to a rapid boil.
  5. lower heat, cover pan and simmer for 40mins.
  6. add cilantro, cumin, nutmeg, and cardomom powder, stir well and serve immediately.
