Giada De Laurentiis's Garlic and Citrus Chicken

"I watched Giada make this on a recent episode of "Everyday Italian" on the Food Network. It is SO GOOD and pretty easy to prepare. She made the Penne with Spinach Sauce to go with it."

  • Position the rack in the center of the oven and preheat to 400 degrees F.
  • Pat the chicken dry and sprinkle the cavity with salt and pepper. Stuff the cavity with the orange, lemon, and garlic halves. Tie the chicken legs together with kitchen string to help hold its shape. Sprinkle the chicken with salt and pepper.
  • Place a rack in a large roasting pan. Place the chicken, breast side up, on the rack in the pan. Roast the chicken for 1 hour, basting occasionally and adding some chicken broth to the pan, if necessary, to prevent the pan drippings from burning. Whisk the orange juice, lemon juice, oil, oregano, and chopped garlic in a medium bowl to blend. Brush some of the juice mixture over the chicken, after it has baked 1 hour. Continue roasting the chicken until an instant-read meat thermometer inserted into the innermost part of the thigh registers 170 degrees F, basting occasionally with the juice mixture and adding broth to the pan, about 45 minutes longer. Transfer the chicken to a platter. Tent with foil while making the sauce (do not clean the pan).
  • Place the same roasting pan over medium-low heat. Whisk in any remaining broth and simmer until the sauce is reduced to 1 cup, stirring often, about 3 minutes. Strain into a 2-cup glass measuring cup and discard the solids. Spoon the fat from the top of the sauce. Serve the chicken with the pan sauce.

  1. Wow, this was really great! Like another reviewer, after I started basting it, I had to cover with foil to prevent burning and kept adding chicken broth. Next time, I may reduce the temp to 325 and just roast longer, put some broth in the pan at the beginning and will wait to begin glazing. I will probably add more garlic too, due to personal taste. With Giada's recipes I always double the sauce. At the end, I put some flour and about 1/4 a cup of chicken broth into a jar, shake it up, then add to thicken the sauce. I think this would be great with bone-in, skin-on chicken breasts, marinating in the sauce for 3 or 4 hours. Even a turkey sounds good with this recipe! Thanks for posting, Kerry.
     
  2. Absolutely delicious roast/grilled whole chicken recipe. I decided to grill the chicken as it was in the 80's, plus I love the flavor of grilled meats. I used a 6 lb. chicken and was only able to get 1/2 of the orange and lemon in the chicken with the whole head of garlic. I also did not need to use that much chicken broth, so probably had a stronger flavor in the remaining sauce at the end. The only change I made was to add some half and half to the juices in the pan, in order to thicken it slightly. I then served the sauce of the chicken and linguine. Thanks for a wonderful recipe that will be made often!!!! Made for spring PAC 2008.
     
  3. This was such a delicious roast chicken recipe. The sauce is delightful, with fresh, citrus flavours mellowed by the garlic. A keeper.
     
  4. Why I picked this to make on a 85 degree day I just don `t know. But I so happy with my grill and I `m sure the lemons and oranges had something to do with keeping the chicken very tender! I preheated the grill to hot as it can go. Placed heavy duty foil in a pan with a rack on the foil. Placing the prepared chicken on the rack into the grill with the lid down. At this point I lowered the heat to medium. Oh I did add 1/2 cup water not stock to not bottom of the pan. I did sub marmalade for the oj concentrate (didn`t have it) AND IT WORKED OUT JUST YUMMY! Used dried oregano just realized it called for fresh! Opps! Silly me! I did baste 1/2 hour then again every 15 minutes. Done after 1 1/2 hours. I didn`t have to add all the broth (water) just used 1 cup! This is an excellent fall dish and now a summer dish to be prepared outdoors! Thanks!
     
  5. The chicken was so moist and the flavor was great. It looked so beautiful. I did put some foil over the top about 30 minutes before it was done just so the skin wouldn't burn. It turned out perfect and the sauce was so yummy. It did take me quite awhile to cook down to one cup, but I really wasn't paying any attention to how much broth I added so I am sure that is why. Thanks for a great recipe!
