- 3⁄4 cup shortening
- 2 cups sugar
- 2 eggs
- 3 cups flour, minus 2 tablespoons and sifted
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon clove
- 1 teaspoon nutmeg
- 2 teaspoons cinnamon
- 2 cups applesauce
- 1 cup golden raisin
- 1 1⁄2 cups dates
- 2 cups pecans, chopped
directions
- Preheat oven to 350 degrees.
- In a bowl cream shortening and sugar. Beat in eggs one at a time.
- In a seperate bowl sift together flour, baking powder, baking soda, salt, cloves, nutmeg, and cinnamon.
- Add applesauce to creamed mixture alternating with dry ingredients, beating after each addition. (Dry, beat, applesauce, beat, dry, beat, applesauce, beat, etc.).
- Stir in raisins, dates, and pecans.
- Bake in a greased and floured bundt pan for 90 minutes, or until brown and done all the way through.
