Ginger Ale Fruit Jello Salad

ingredients
- 1 (4 ounce) package orange gelatin
- 1 cup boiling water
- 1 cup ginger ale
- 2 cups sliced peaches
directions
- In a large bowl, combine dry gelatin and boiling water.
- Mix well to dissolve gelatin.
- Stir in ginger ale.
- Add peaches and mix to combine.
- Pour mixture into an 8x8 dish.
- Refrigerate until firm.
- Cut and serve.

What a delicious, simple dish!! I can't believe no one has tried this before... TRY IT!! I was so surprised at how much I liked it. It looked like something hubby would like, so I made it for him, and I absolutely love it!! (Of course, so does he!) I can't wait to experiment with other flavors and fruits. I have to admit to being a fan of jello anyway, but wow! The Ginger Ale makes it taste so good. I made mine with 3 layer lime with pears, apricot with mandarin oranges, and Strawberry Kiwi with strawberries. It took a little extra time of course to do the layering but it was pretty and tasted great. The best thing about this recipe is it is so versatile. I will have fun trying new variations of this one. I live in Las Vegas. I was lucky enough to run into Recipezaar around Nov. 2000 and got hooked quickly. I am a cookbook collector and have been collecting recipes for as long as I can remember.
