  • Combine pineapple juice and ginger in a blender and blend until nearly smooth. Strain into a tall glass over ice. Stir in seltzer and garnish with a pineapple spear, if desired.

  4. Wowzers, this was GOOD!!! So easy, too! I had some pineapple spears in coconut water that I used as a garnish and it added even more flavor! Next time, I won't bother straining - there was hardly anything in the colander! I also agree with some other reviews - this would be good when made a little boozy! :-)
