Ginger, Beef, and Green Bean Stir-Fry

  • Combine first 5 ingredients in a bowl, stirring well with a whisk. Set aside.
  • Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat.
  • Add 1/4 cup chopped green onions, ginger, and garlic to pan; sauté 30 seconds.
  • Add beef to pan, and sauté for 4 minutes or until browned. Remove from pan.
  • Wipe pan dry with a paper towel. Add remaining 1 teaspoon oil to pan; heat over medium-high heat.
  • Add beans and pepper to pan. Cover and cook 3 minutes. Uncover and cook 3 minutes, stirring frequently.
  • Add 3/4 cup green onion tops; sauté 1 minute. Return beef mixture to pan. Stir in broth mixture; bring to a boil.
  • Cook 1 minute, stirring constantly. Remove from heat. Serve with rice.

  1. We'd just harvested a mess of wax beans and decided to make this recipe with that substitution. Excellent meal: the sauce (used sambal oelek as the chili-garlic component) was excellent!
     
  2. I increased the amount of beef by about .5 pound and decreased the sauce by about a 1/4. I think that all the sauce would have made it too saucy for my preference. Otherwise I left it alone. I really enjoyed this meal and thought the flavors really popped. Thanks for a flavorful and healthly meal.
     
  3. If I could give this more than 5 stars I would. This is now my all time favourite stir-fry. I didn't have Lee Kum Kee sauce so I used Frank's hot sauce. It gives the stir fry a nice flavour with a little bite to it. I substituted the green beans for broccoli and may try it with asparagus next time. I also used jarred ginger puree and only put in 1 tsp. I also used up some left over steak from last nights dinner. This meal was sensational and I can't wait to make it again.
     
  4. Wooo this is exactly what I was looking for! I loved this recipe! the only thing I didn't have was the chili sauce so I just used some red pepper flakes. Awesome!

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is.
