Directions

  1. Put water in a medium pot and bring to a boil.
  2. Mash ginger root in a medium bowl with a wooden spoon.
  3. Add ginger, zest, lemon juice and sugar to pot.
  4. Stir until sugar dissolves.
  5. Simmer 20 minutes.
  6. Remove from the heat and cool completely.
  7. Refrigerate syrup and use within a week.
