  • 1 12 lbs carrots, peeled and trimmed, sliced (or use baby carrots)
  • 23 cup water
  • 2 tablespoons butter
  • 1 teaspoon sugar
  • 1 teaspoon salt, more if needed
  • 2 teaspoons ginger, minced
  • 1 12 teaspoons cilantro, chopped

  • Put the carrots in a large skillet and add the water, butter, sugar and salt; bring to a boil over high heat.
  • Cover the pan with the lid slightly askew, reduce the heat to medium heat and cook at a steady boil, shaking the pan occasionally until the carrots are tender ; 7 - 9 minutes.
  • Uncover, stir in the ginger and continue to boil until the liquid evaporates to create a syrup. Shake the pan and roll the pieces around to evenly glaze the carrots.
  • Add a pinch more salt if needed, toss with the cilantro and serve.
